For people who cannot or choose not to eat dairy or soy, almonds are a gift. These tree nuts are nutrient rich and contain antioxidants. Plus they make for a really tasty base for dairy-free milks and ice creams.
Almond milk has been in use since the middle Ages, when it was used in cooking as a substitute for cow’s milk. Almond milk stores well, so medieval cooks used it instead of cow’s milk, which spoils rapidly without refrigeration and had to be immediately processed into butter or cheese for storage.
Almonds are rich in protein, fibre, magnesium, selenium, manganese, zinc, potassium, iron, phosphorus, trytophan and calcium. The high levels of antioxidant vitamin E in almond milk make it effective in the prevention of cancer and can slow the signs of aging.
Almond milk also contains flavonoids and good monounsaturated fats, which help to lower levels of Low-density lipoprotein (LDL) “bad” cholesterol and protect the heart. US researchers found the powerful antioxidants in almonds help inhibit the growth of radicals and support a strong immune system.
The UK Institute of Food Research has found that almond meal is a natural prebiotic assisting the growth of beneficial gut flora and bacteria in the intestinal tract, which Babushkas knows is good for overall health, immunity and wellbeing.
Coconut Milk:
Coconut milk from a nutritional perspective is an excellent choice. It is high in saturated fatty acids and medium-chain triglycerides (MCT). These have varied benefits on your health and are burned easily as fuel for your body unlike other fatty acids. MCTs are particularly beneficial in that they don’t require bile acids for digestion. They are directly shunted to the liver via the portal vein.
There are three main benefits of coconut milk, Immune system health, heart disease prevention and weight loss.
Immune System Health:
Coconut milk contains lauric acid, antimicrobial lipids and capric acid. These have antibacterial, antifungal and antiviral properties. The body converts lauric acid into monolaurin, which is believed to fight the and bacteria that cause herpes, influenza and even HIV. A great companion to have along the probiotics in the fight against bad bacteria with your system.
Heart Disease
Coconut milk has been spotlighted in recent research due to the health benefits of medium chain fatty acids and saturated fats and their impacts on heart health. People who eat primarily coconut oils rather than vegetable or animal fats have significantly lower levels of heart disease. The reason for this is how well the body is able to breakdown and turn to fuel the fats in coconut oil especially compared to animal and vegetable fats.

Weight loss
Some counterintuitive research has revealed that not eating enough fat can in fact make you fat. Rice Milk:
The main benefit of the rice milk in babushkas nondairy yoghurt is how ridiculously low in fat and calories it is. We need the protein and solids offered by nut/grain milk to give a good consistency to our yoghurt and we could have added more almond or coconut. However despite some fats being good, we can all agree that unnecessary extra fat is something we can do without. The rice milk helps give the yoghurt body and mouth-feel and contributes so little to the fat and calorie count.
So that is the base of our tasty healthy yoghurt. Many benefits, filled with nutrients, antioxidants, minerals high in good fats but low in fat all round.
